Perfect Brunch Potatoes

When I was growing up, my mother always cooked potatoes and onions for breakfast and I looked forward to them every time! Since I have my own family, I’m able to keep the tradition going and put my own spin on it! I’ve been cooking these potatoes for years, so I figured that I’d share the love with all of you. I know every family has their own food traditons and I want my children to rave about my potatoes and call me for the recipe when they grow up! These potatoes are great at any time of day, but I definitely prefer them with breakfast/brunch. I do believe that your family will love them, my kids (Chloe & Drew) can be picky eaters but they love these! And of course Chris loves them too! To me, their perfect, hence the name “Perfect Brunch Potatoes.”  Enjoy!

Perfect Brunch Potatoes

Serves: 4-5
Whip up these potatoes with your normal breakfast fare to take it up another notch. Great paired with scrambled cheese eggs, bacon or sausage.
Ingredients
  • 2 -3 Medium Russet Potatoes
  • 1/4 cup diced onion
  • 1/4 cup diced green pepper
  • 1/4 cup red pepper
  • 2 tsp garlic powder
  • 2 tsp salt (or more to taste)
  • 2 tsp black pepper
  • 1 tsp paprika
  • 3 tsp vegetable oil
  • 1/4 green onion chopped (for garnishing)
Instructions
  1. Peel and dice your potatoes to your desired thickness.
  2. Add potatoes to a large bowl and enough water to cover them up.
  3. Put in microwave for 6 minutes, rinse and drain potatoes.
  4. In a bowl, put your potatoes, green peppers, red peppers and onions and then add all your seasonings and toss thoroughly.
  5. Heat a medium sized saucepan to medium and add vegetable oil.
  6. When oil comes to temperature add your potato mixture and sauté until you can easily break a potato with your fork.
  7. Garnish with green onions and serve!
